With courses that range from Nutrition and Dietetics to Food Safety and Sanitation, CSU provides a comprehensive education in all aspects of cooking. The Nutrition and Dietetics curriculum covers topics such as nutrition principles, dietary planning strategies, and food energy sources. Students will also learn about food safety, sanitation, and how to use different types of kitchen equipment. In addition, they will develop knowledge of food labeling, inventory control, and personnel management. The Food Science curriculum provides in-depth instruction on food production, chemistry, and technology. Courses explore scientific concepts such as food safety, quality assurance, product development, and sensory analysis. Students will also learn about microbiology and food allergens, as well as food storage and preservation techniques.

The Culinary Arts program at CSU offers specialization in areas such as baking and pastry making, Italian cuisine, and culinary nutrition.
