At Ball State, the Department of Hospitality and Tourism Management offers a full range of courses and degrees related to culinary arts, including culinary management, food & beverage management, culinary nutrition and hospitality law. The department offers both the Associate degree in Food and Beverage Management and the Bachelor’s degree in Culinary Arts, Culinary Nutrition or Culinary Management.
In the Culinary Management program, students are taught the fundamentals of food preparation, kitchen operations and menu planning. They learn the essentials of restaurant and catering management as well as gain a deeper understanding of the business aspects of running a restaurant. In addition, they gain valuable production and service skills such as food safety management, quality control and customer service.

They explore the cultural and social influences on food preferences, learn to create menus that meet individual dietary requirements and also develop skills necessary for nutrition education. Students in this program often go on to become health and nutrition advisors, dietitians and chefs.
